1. Spinach and Tomato Quinoa Salad
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or low-sodium vegetable broth
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. In a saucepan, combine the quinoa and water (or vegetable broth), and bring to a boil. Reduce the heat, cover, and simmer for about 15 minutes until the quinoa is cooked and water is absorbed.
2. In a large bowl, combine cooked quinoa, chopped spinach, cherry tomatoes, red onion, and feta cheese (if using).
3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and toss gently to combine.
4. Serve chilled or at room temperature, garnished with fresh basil if desired.
